White chocolate & apricot slice

Rich and tasty, these no-bake slices are deceptively easy and guaranteed to be popular

  • Cooking: 20 mins
  • Serves: 15

What you need:

  • Unsalted butter 110g (4oz)
  • White Chocolate chips 200g (7oz)
  • Ginger biscuits 200g (7oz), crushed
  • Ready-to-eat dried apricots 200g (7oz), chopped
  • Mini marshmallows 75g (3oz)
  • Chocolate vermicelli 2tbsp

What you do:

  1. Grease and line a 20cm (8in) square cake tin.
  2. Put the butter and chocolate chips in a saucepan and heat very gently, stirring, until melted together.
  3. Remove from the heat and stir in the biscuits, apricots and marshmallows. Press into the tin, sprinkle with the chocolate vermicelli and chill for 2 hours or until set.
  4. Slice into 15 bars and remove from the tin to serve. Store, covered, in the fridge, for up to a week.
