1 portion of vegetables

Equipment:
Jug
Small non-stick frying pan

What you need:

  • 2 large eggs
  • 1 tsp olive oil
  • ½ x 198g can Green Giant Sweetcorn, drained
  • pinch dried oregano or mixed herbs
  • 25g mature cheddar cheese, grated

What you do:

  1. Break the eggs into a jug, season and beat with a fork then add the sweetcorn Pre-heat the grill
  2. Heat a small non-stick pan with the oil, pour the eggs and sweetcorn into the hot pan and quickly swirl to cover the pan evenly. Cook over a medium high heat and when the egg begins to set around the side, using a spatula, pull the mixture away from the sides towards the middle, tilt the pan to allow the liquid egg to fill the gaps.
  3. When the top is nearly set, sprinkle with herbs and cheese.
  4. Place the pan under the hot grill and cook until the cheese melts.
