Salmon, basil & lemon turnovers
You need just three main ingredients for this easy family dish - salmon, pastry and onions
Serves 4
What you need:
- 1 x 500g block Jus-Rol Puff Pastry - thawed
- 4 x salmon fillets - skinned
- 1 x small onion - chopped finely and cooked in a little oil or butter
- 16 - 20 basil leaves
- Zest of 1 lemon
- Salt and black pepper
- Beaten egg to glaze
What you do:
- Preheat oven to 220°C (200°C for fan assisted ovens) /425°F/Gas Mark 7.
- Roll out pastry to a rectangle approx 16in x 12in and cut into 4 equal rectangles.
- Place 1 portion of salmon on one lower half of each pastry piece, each fillet standing on 1 large or 2 small basil leaves. Top each with spoonful of onion, some lemon zest, salt and black pepper and further basil leaves.
- Brush pastry edges with beaten egg and fold over pastry to cover fish, press edges together to seal well, knock up and flute if desired and make slits in top of pastry. Brush each with beaten egg and bake for 15 - 20 minutes until pastry risen and golden brown.
