Smoked salmon topped buckwheat blinis
Everyone who loves fish and loves canapes will be following this plate of salmon topped blinis around at a party, so make these and your guests will be very happy indeed
Preparation time: 10 minutes
Cooking time: 10 minutes
Makes: Approx 20
What you need:
- 2 eggs
- 100g buckwheat flour
- 75g plain flour
- ½ tsp bicarbonate of soda
- 300ml Alpro soya Original alternative to milk
- 1 tbsp oil
- Smoked salmon
- 5 tbsp Alpro soya alternative to natural yogurt
- 1 tbsp lumpfish caviar
- 1 x 15g pack fresh dill
What you do:
- Whisk the eggs until frothy.
- Stir in the flours and bicarbonate of soda.
- Add the Alpro soya Original, beating well to keep a smooth batter.
- Heat a little oil in a frying pan and drop in a dessertspoonful of batter for each pancake, leaving plenty of space between the blinis, as they spread a little as they cook.
- Cook for a minute until nicely brown, flip and cook for a further minute or until golden brown. You will need to do this in a number of batches.
- When ready to serve, fold the smoked salmon and place on the blinis, top with a teaspoon of Alpro soya alternative to natural yogurt, a small pile of caviar and a garnish of dill.
