Flambe crepe with grapefruit

To ignite your inner flame, why not try flambéing the pancakes in grapefruit vodka? Garnish with fresh grapefruit segments and you’re good to go

• Preparation: 15 mins
• Cooking: 5 mins
• Serves: 4

What you need:

For the pancake mix

• 100g of plain flour
• Pinch of salt
• 1 egg
• 275ml of milk,
• 25g of butter
• 50ml of Grapefruit Fusion Finlandia Vodka

What you do:

1. Pour two tablespoons of pancake batter into a hot pan and tilt pan to coat base evenly (see pancake mix recipe below for how to make the batter)
2. Cook until pancake moves freely then toss until pancake is golden on both sides
3. Pour 50ml of Grapefruit Fusion Finlandia Vodka on top of the pancake and heat it until it sets on fire
4. Once flames have died down, serve immediately
5. The alcohol will burn away after a few moments, making way for a delicious grapefruit flavour

Pancake Mix

1. Sift 100g of plain flour with a pinch of salt into a bowl and break in an egg with a wooden spoon
2. Gently add 275ml of milk, a little at a time, and continue beating the egg until a smooth batter forms
3. Heat 25g of butter in a 7-inch frying pan
4. Once the pan is hot, put in two tablespoons of batter and tilt the pan to coat the base evenly
5. Cook until the pancake moves freely, then toss or turn until pancake is golden on both sides

Handy cook's tip:

Flambéing is easier than you think. The alcohol burns away after a few seconds, making way for a delicious grapefruit flavour.
