Wheats tea loaf

Great for a tasty afternoon loaf with a cup of tea in front of the TV on a Sunday afternoon, so get baking!

Preparation: 20 minutes to prepare (plus soaking time) and approx 1 hour to bake
Makes: a 450g (1lb) loaf

What you need:

  • 50g Kellogg's Wheats (any variety)
  • 350g Luxury Mixed Dried Fruit
  • 300ml hot spiced tea using 2 teabags
  • 275g white self raising flour, sifted
  • 1 medium egg, beaten

What you do:

  1. Place fruit in a large bowl with teabags, add 300ml of boiling water and stir well ensuring teabags are fully submerged
  2. Cover and leave to soak for at least 4 hours (preferably overnight)
  3. Preheat oven to 200°C (400°F), gas mark 6
  4. Prepare a greased 450g (1lb) loaf tin fully lined (approx 3cm over top of sides) with greaseproof paper
  5. Place Kellogg's Wheats in a plastic bag (reserving 4 for decoration) and crush finely with rolling pin
  6. Combine crushed Kellogg's Wheats with sifted flour in a large mixing bowl and make a well in the centre
  7. Pour in beaten egg and fold in the dry ingredients using a metal spoon
  8. Squeeze teabags into fruit mixture and pour over dry ingredients, folding in lightly until just combined
  9. Empty into the lined loaf tin and gently mould into a rounded loaf shape without pressing mixture too much
  10. Crush remaining Kellogg's Wheats roughly and sprinkle on top of loaf, pressing in very lightly and place on a baking tray
  11. Turn oven down to 190°C and bake in middle of oven for approx 30 minutes until lightly golden
  12. Turn oven down to 150°C and continue to bake for 30 - 40 minutes or until a skewer comes out cleanly
