Open halloumi & pepper sandwich

Some people call halloumi 'squeaky cheese' because of its texture. We think it's simply delicious! Try it in this easy sandwich...

  • Preparation: 10 mins
  • Cooking: 15 mins
  • Serves: 2

What you need:

  • 250g halloumi cheese
  • Zest and juice of 1 lemon
  • 3 tbsp Cold Pressed Rapeseed Oil
  • 1 ciabatta loaf (275g)
  • 200g chargrilled peppers in oil, drained

What you do:

  1. Cut the halloumi into 8 slices.  Mix together the lemon zest, juice and 2 tbsp oil. Add the cheese and marinate for 5 minutes.
  2. Meanwhile, cut the bread in half and each in half again lengthways. Brush each side with the remaining oil and griddle for 1-1½ minutes each side until golden and crisp.
  3. Griddle the cheese for 1 minute on each side until golden. Top the bread with the peppers and then the cheese. Drizzle over the remaining lemon mixture.

Rapeseed oil

Rapeseed oil is produced from the oilseed rape plant. The versatility of this healthy oil is recognised by chefs, who value its taste, cooking performance and health benefits. Because of its low content of saturated fat and high content of monounsaturated and polyunsaturated fats, rapeseed oil is commonly used in cooking and in salad oils, salad dressings, mayonnaise, fats and margarine.
