Goat’s cheese, roasted red pepper, mint & rocket wraps
Jazz up your lunchtime with this delicious wrap idea
- Preparation: 10 mins

What you need:
- 100g Coeur de Lion La Buche Goat’s cheese - rind removed
- 10 mint leaves shredded
- 1 roasted red pepper
- Handful of rocket
- 1 small flour tortilla wrap
What you do:
- Heat a heavy bottom frying pan over a medium heat; cook the tortilla for 15 secs until warm or alternatively 15 secs in the microwave.
- Spread the warm tortilla with the goat’s cheese using a spatula.
- The cut the red pepper into strips and top the tortilla, sprinkle with the mint leaves and rocket.
- Roll the wrap tightly and pin with a cocktail stick.
- Either slice in half and eat as a lunchtime snack or slice diagonally in to 5 and use as a party canapé.
