Goat’s cheese, roasted red pepper, mint & rocket wraps

Jazz up your lunchtime with this delicious wrap idea

What you need:

What you do:

  1. Heat a heavy bottom frying pan over a medium heat; cook the tortilla for 15 secs until warm or alternatively 15 secs in the microwave.
  2. Spread the warm tortilla with the goat’s cheese using a spatula.
  3. The cut the red pepper into strips and top the tortilla, sprinkle with the mint leaves and rocket.
  4. Roll the wrap tightly and pin with a cocktail stick.
  5. Either slice in half and eat as a lunchtime snack or slice diagonally in to 5 and use as a party canapé.
