Boxing Day frittata
This dish is a great way to use up any leftovers from Christmas day. It's delicious hot or cold and would make a good addition to a buffet.
- Preparation: 5 mins
- Cooking: 30 mins
- Serves: 4
What you need:
- 500g Christmas leftovers - cold roast potatoes, peas, carrots, stuffing, parsnips, chopped, even add cranberry sauce
- 50g cheese cut into bitesize pieces
- 8 large free-range eggs, beaten
- 1 tsp fresh rosemary, chopped
- Salt and pepper to taste
What you do:
- Pre-heat oven to 200C/Gas mark 6.
- Line a flan dish with greaseproof paper.
- Arrange the Christmas left-overs and cheese evenly into the flan dish.
- Beat the eggs, add the chopped rosemary then pour over the vegetables.
- Season with salt and pepper and bake in the oven for 30 minutes or until the eggs are thoroughly cooked.
Cook's tip:
Serve with a healthy salad.
