Sweet & sour chicken pancakes

Crunchy, sweet and sour, these pancakes are really simple to make and take practically no time to prepare!

What you need:

  • 1 roasted chicken breast, skinned
  • 350g jar Uncle Ben's Sweet And Sour Oriental Sauce
  • small handful fresh chopped coriander
  • 1 carrot, cut into julienne strips
  • 1/4 cucumber, cut into thins strips
  • 4 spring onions, trimmed and shredded
  • 12 Chinese style pancakes

What you do:

  1. Cut the chicken breast in half width ways and shred the meat into a bowl.
  2. Stir in half the Uuncle Ben's Sweet And Sour Sauce and the coriander and stir well.
  3. Arrange the pancakes on a work surface and divide the chicken mixture between them.
  4. Add a few carrots sticks, cucumber strips and spring onions and roll up to enclose. Serve immediately with the remaining sauce to dip into if liked.
