Sweet & sour chicken pancakes
Crunchy, sweet and sour, these pancakes are really simple to make and take practically no time to prepare!

Serves: 4
What you need:
- 1 roasted chicken breast, skinned
- 350g jar Uncle Ben's Sweet And Sour Oriental Sauce
- small handful fresh chopped coriander
- 1 carrot, cut into julienne strips
- 1/4 cucumber, cut into thins strips
- 4 spring onions, trimmed and shredded
- 12 Chinese style pancakes
What you do:
- Cut the chicken breast in half width ways and shred the meat into a bowl.
- Stir in half the Uuncle Ben's Sweet And Sour Sauce and the coriander and stir well.
- Arrange the pancakes on a work surface and divide the chicken mixture between them.
- Add a few carrots sticks, cucumber strips and spring onions and roll up to enclose. Serve immediately with the remaining sauce to dip into if liked.
