Classic chicken cacciatore

Always cook with chicken breasts? Why not try this tasty, healthy chicken thigh recipe for a change?

  • Serves: 6

What you need:

  • 1kg boneless, skinless chicken thighs
  • 1tbsp vegetable oil
  • 1 onion, sliced
  • 1 green pepper, cored and sliced
  • 2 cloves garlic, crushed
  • 2 cans chopped tomatoes
  • 250ml Heinz Tomato Ketchup
  • 50ml white wine or chicken stock
  • 1 1/2tsp each dried thyme and oregano leaves
  • Rice, to serve

What you do:

  1. Preheat the oven to 180°C.
  2. Trim the chicken of excess fat or gristle.
  3. Heat oil in a large pan set over medium heat.
  4. Brown the chicken in batches and transfer to a casserole dish.
  5. Sprinkle onion and peppers evenly over the chicken.
  6. Stir together the chopped tomatoes with the Heinz Tomato Ketchup, wine (or chicken stock), garlic, thyme and oregano.
  7. Pour over the chicken and vegetables.
  8. Cover and bake for 45 minutes to 1 hour or until chicken is tender and sauce is thickened.
  9. Serve with rice.
