Edam & veggie bean wraps

Children will love to make these simple Dutch Edam and bean wraps. They are perfect for lunch boxes or for a picnic and also make a great cold meal for kids.

  1. In a large bowl, mix together the red pepper, sweetcorn and mixed beans with the tomato salsa.
  2. Place a flour tortilla on a chopping board and arrange some of the lettuce over the base of the tortilla. Spoon some of the bean mixture down the centre of the tortilla, then top with a handful of the grated Edam. Spoon 15ml (1tbsp) of the yogurt over the top.
  3. Carefully roll up the tortilla, tucking the ends in as you go, to encase the filling. Repeat with the remaining tortillas and filling. Cut in half and serve immediately.

Cook's tip: You can make these wraps in advance, just wrap in cling film and store in an airtight container in the fridge. Alternatively you could replace the tomato salsa for the same quantity of prepared barbecue sauce.
