Nourishing chilli beef & red pepper Mexican-style wraps
Get those five a day in the kids without a battle with this exciting evening meal! Created for the Uncle Ben's 'Back to School Buddy' campaign. All Uncle Ben's sauces include real, wholesome ingredients and contain no artificial colours, flavours or preservatives. Uncle Ben's sauces are packed with chunky vegetables like tomatoes, carrots, bamboo shoots, peppers and onions.

What you need:
- 500g jar Uncle Ben's Medium Chilli con Carne sauce
- 2 250g pouches of Uncle Ben's Express Long Grain rice
- 500g lean minced beef
- 1 red onion, roughly chopped
- 1 red pepper, deseeded, cored and cut into chunks
- 198g tinned sweetcorn kernels, drained
- 8 outer leaves from an iceberg lettuce
- 2 spring onions, trimmed and finely shredded
- 2 tsp vegetable oil
What you do:
- Heat the oil in a large frying pan and fry the minced beef, onion and red pepper for 3-4 minutes over a high heat until browned. Stir in the sweetcorn and Uncle Ben's Medium Chilli con Carne sauce and simmer for 10 minutes
- Divide the mixture between the lettuce leaves and scatter over some shredded spring onion. Fold one edge of the lettuce over the filling, then fold in the two sides of the lettuce and roll up like a swiss roll to completely enclose the filling
- Heat two pouches of Uncle Ben's Express Long Grain rice according to the instructions and serve immediately
Handy cook's tip:
This is a great way to get the kids to eat more vegetables! Serve the lettuce cups, a bowl of chilli and an extra bowl filled with diced cucumber, chopped tomato, diced avocado and sweetcorn kernels. They can be scattered over the chilli mixture before folding the wrap.
