Chicken fajitas
Speedy to make, these traditional Mexican chicken fajitas can be made as spicy as you like, then cooled down with sour cream and guacamole
What you need:
- 50g boneless chicken, cut into thin strips
- 20g Discovery Wicked Chilli Spice Mix
- 3 x 15ml tbsp Oil
- 1 x large onion, sliced
- 1 x green pepper, sliced
- 1 x red or yellow pepper, sliced
- 12 x Discovery Chilli and Jalapeno Tortillas
- 100g Discovery Guacamole
- 100g Discovery Ranch Salsa
What you do:
- Cut the chicken into thin strips (or coat and cook a whole breast, slicing afterwards) and sprinkle with Wicked Chilli Spice Seasoning.
- Heat oil. Add onion and peppers and fry over high heat for approx. 5 minutes.
- Remove from the pan with a slotted spoon.
- Heat remaining oil. Add chicken and stir fry for approx. 5 minutes or until the chicken is cooked and browned.
- Add the onions and peppers and quickly fry until heated through.
- Serve immediately with flour tortillas, salsa and guacamole.
