Shrewsbury lamb & new potatoes

Serves: 4
What you need:
- 350g new potatoes, scrubbed and thickly sliced
- 2 tbsp olive oil
- 1 onion, finely chopped
- 1 clove garlic, crushed
- 4 English lamb leg steaks
- 4 tbsp redcurrant jelly
- 2 tsp Worcestershire sauce
- 2 tsp tomato puree
- 1 tbsp freshly chopped thyme
- Zest and juice of half a lemon
- Salt and pepper
- 75g peas
What to do:
- Place the new potatoes in a pan of lightly salted boiling water. Cover and simmer for 15 minutes or until tender then drain and return to the pan.
- Heat the oil in a frying pan and fry the onion and garlic for 3-4 minutes until browned. Transfer to a bowl.
- In the same pan, fry the lamb according to taste and remove. Add the onions and potatoes to the pan along with the remaining ingredients except peas. Bring to the boil and reduce by half. Add the lamb and peas and heat through.
