Lamb chops with goat's cheese & caramelised red onion

It's not a pairing that you'd immediately think of, but once you've tried lamb with goat's cheese, you'll never look back!

  • Serves: 4

What you need:

  • 4 lean lamb chops, cutlets or leg steaks
  • Salt and freshly milled black pepper

For the goat's cheese & caramelised red onion topping:

  • 60ml/4tbsp prepared caramelised red onion chutney
  • 50g/2oz firm goat's cheese, thinly sliced

What you do:

  1. Place the chops on the grill pan and season on both sides with salt and pepper.
  2. Cook the lamb under a preheated moderate grill for 6-8 minutes. Turn the chops over and continue to cook for a further 3-4 minutes.
  3. Spread the chops with the chutney and top with the goat's cheese. Return to the grill and continue to cook for a further 3-4 minutes.
  4. Serve the chops with a salad and crusty bread.
